Staking is a way to participate in maintaining a blockchain and earn rewards by locking up some of your cryptocurrency for a period of time. Instead of using computer power like mining, staking uses the amount of coins you hold to determine how much you can participate.
You own 100 units of a cryptocurrency that supports staking. You agree to lock them up in the network for one year. During that time, the network uses your coins to help validate transactions, and in return, you earn 5 new coins as a reward, bringing your total to 105 coins when the year ends.
